International certificates
These tests include ISO 2171 for determining ash yield, which is an important indicator of the mineral content of the flour. ISO 27971 is used to measure wet gluten and gluten index, which are essential in evaluating the protein quality of the flour. The water absorption capacity of the flour is determined by ISO 5529, while ISO 7973 is utilized to measure the sedimentation value (Zeleny test), which is an important factor in determining the gluten quality of the flour. Additionally, ISO 3093 is used to determine the falling number, which indicates the flour’s alpha-amylase activity, and ISO 24264 is used to measure the baking value, which is a critical factor in determining the flour’s performance in baking applications.
